Oops Forgot the Sugar Rice Pudding

So how did I completely forget to include the sugar in this recipe.  Well I was making it as the new mom of a 4 day old baby to use up the leftover rice from the Mongolian Beef my neighbor had kindly brought for me on my first night home from the hospital.


3 eggs
1 3/4 cups milk
1/2 cup sugar (oops completely forgot to put in the sugar)
1 teaspoon vanilla

dash of nutmeg (optional)
1/4 teaspoon cinnamon


1 1/2 cups cooked rice
1/2 cup raisins (I like the golden raisins)


Whisk together the eggs, milk, sugar (if you decide to include it), vanilla, nutmeg and cinnamon.
Put the cooked rice in the bottom of a 1 1/2 quart casserole.  I used leftover rice from Chinese food (1 1/2 cups is almost a full container of rice) and just made sure that it had been fluffed up.  Sprinkle the raisins on top of the rice.
Pour the egg and milk mixture over the rice.
Bake in a 325F oven for 50-60 minutes or until a skewer comes out clean.


Enjoy warm or cold.  I was surprised when I tried it that with the natural sweetness of the milk and the raisins that I honestly didn't miss the sugar.  I realized just as I was taking it out the oven that I had completed forgotten to include the sugar.
